What’s better than late night baking? Late night baking with minimal ingredients and slightly intoxicated friends! Years ago while I was living in Rohnert Park, CA, every so often (cough… nightly) I would make late night runs to the 24hr grocery store for ingredients to satisfy my sweet tooth. Typically a chocolate bar would suffice, but occasionally I would go crazy and splurge and go for more grandiose things like cookies, ice cream, or chocolate milk (oh my). Naturally, every semester before and during finals week the frequency of my visits would increase and I realized that I wasn’t alone in this late night routine. Not only did the checkout lines get longer, but I started to notice a trend in what people were buying after 10pm in this college town. My unpublished results showed that before and during exam week that 75+% of people were visiting the grocer for some sort of sweet: candy, ice cream, cookies, etc. Next was salty snacks or beer, followed by fresh fruit (clean food, clean mind… blah, blah, blah) and condoms (I swear Mom, they were NOT mine).

While my stress levels have dropped dramatically since my college days, apparently my late night sweet cravings have not. This past Saturday evening, while I was busy and focused on canning (sriracha pickled eggs!!!), a friend decided to raid my tiny and understocked kitchen cabinets for something, anything to satisfy the sweet needs. Fortunately, minimal ingredient cooking is kind of his forte, and with only a little bit of “hmmm, what else you got?”, the random late night baking was a success resulting in these beautiful, gluten-free, peanut butter and jam thumbprint cookies. In the moment, I let down my “only a couple jars left, we can’t use it” guard and offered up some of my Blueberry Chocolate Jam as the finishing touch to the cookies. Oh my moon! By absolutely no surprise they turned out great. Also, we figured out that with a bit of caution (safety 3rd), two very tall people can very successfully bake/can in my closet sized kitchen. Yay! 🙂

Peanut Butter & Jam Thumbprint Cookies

Prep Time: 10 minutes

Cook Time: 9 minutes

Total Time: 19 minutes

Yield: 12 cookies

Ingredients

Instructions

  1. In a medium-sized bowl combine egg and sugar
  2. Using a whisk, beat thoroughly until mixture turns white and expands in size (this may take several minutes)
  3. Stir in peanut butter
  4. Let batter sit for 5 minutes (this will give the protein in the egg time to set up with the sugar and peanut butter)
  5. Using your hands, form 12 one inch balls and place cookies on a cookie sheet (preferably lined with parchment paper)
  6. Press down the middle of the cookie with your thumb to make an indent for the jam
  7. Bake cookies at 350 F for 9 minutes
  8. Remove cookies from oven and let cool
  9. Dollop ~1tsp of jam in the middle of each cookie
  10. Eat 'em up!
